The Nantou district is the most productive district when it concerns tea: 8000 tons out of the 20 000 tons produced annually on the island! The process of lightly oxidized and rolled oolongs was perfectioned here. It is a process which was already used in the high mountain areas such as Anxi on teas such as the Tie Guan Yin. The most famous oolong teas of the Nantou region are: Dong Ding (or Dung Ding or Tung Ting) with flowery and subtle notes, the Hong Shui with ripe fruit and compote flavours and the Gui Fei with a pronounced honey flavour (leaves eaten by the grasshoppers, similar to the Hua-Lien).
